Ingredients
3 medium red beets, peeled
1 cup cooked red lentils
1 garlic bulb, roasted
Olive oil (to taste)
Salt and pepper (to taste)
Optional: apple cider vinegar or tahini for creaminess and depth
Preparation
Preheat oven to 350°F (175°C).
Peel the beets and place on a roasting pan alongside the garlic bulb. Slice the top of the garlic bulb to expose the cloves.
Roast for 45 minutes, or until beets are tender.
While roasting, cook red lentils in boiling water for 5–7 minutes, until soft.
Squeeze the roasted garlic cloves out of the bulb.
Combine beets, lentils, roasted garlic, and olive oil in a blender or food processor. Blend until smooth.
Season with salt and pepper to taste. Adjust flavor with a splash of apple cider vinegar or tahini if desired.
