Summer Sattvic Roasted Chicken with Lemon Herb Tahini

A simple, grounding meal that honors seasonal abundance.

There is something profoundly healing about a meal that doesn't rely on complicated techniques or dozens of ingredients. Ayurveda teaches that when we begin with fresh, seasonal foods and prepare them with intention, the body recognizes them as nourishment rather than stress.

This dinner came together with little more than olive oil, salt, pepper, fresh vegetables, and a creamy lemon herb tahini sauce. The vegetables become naturally sweet under the broiler while the chicken develops crisp golden skin without heavy seasoning. Every bite feels satisfying without leaving you feeling weighed down.

Ingredients

Chicken

  • 1 bone-in split chicken breast

  • 1 tablespoon extra virgin olive oil

  • Sea salt

  • Fresh cracked black pepper

Vegetables

  • 1 zucchini, sliced into thick rounds

  • 1 yellow squash, sliced

  • 1 large sweet Vidalia onion, sliced into rings

  • 2 Portobello mushroom caps, sliced

  • 1 tablespoon olive oil

  • Sea salt

  • Fresh cracked black pepper

Lemon Herb Tahini Sauce

  • ¼ cup tahini

  • Juice of 1 lemon

  • 1 small garlic clove, minced (optional)

  • 2–3 tablespoons warm water

  • 1 tablespoon chopped parsley

  • 1 teaspoon chopped dill

  • Sea salt and black pepper to taste

Directions

Preheat the oven to 400°F.

Pat the chicken dry and brush lightly with olive oil. Season generously with sea salt and freshly cracked pepper.

Bake for approximately 40–50 minutes, or until the internal temperature reaches 165°F and the skin is crisp and golden.

While the chicken cooks, toss the zucchini, yellow squash, onions, and mushrooms with olive oil, salt, and pepper.

Spread onto a sheet pan and place under the broiler for 6–10 minutes, turning once, until caramelized with lightly charred edges.

Whisk together the tahini, lemon juice, herbs, and enough warm water to create a smooth, pourable sauce.

Plate the roasted vegetables beside the chicken and drizzle generously with the lemon herb tahini sauce.
